When leftovers slap harder than your weekend plans.
Look, we’ve all stared into the fridge like it owes us money. Leftover chicken? Check. Random bits of cheese? Check. A few rogue jalapeños and a half-used tub of BBQ sauce that may or may not be from a backyard bender last summer? Yep. Welcome to my culinary philosophy: use what you’ve got and make it taste like you meant to do that.
This BBQ Chicken Quesadilla was born out of pure fridge chaos. I had chicken thighs from two nights ago, cheddar and Monterey Jack begging not to mold, and a red onion that was probably judging me from the crisper drawer. Add in some pineapple and jalapeños and suddenly we’ve got something borderline gourmet—or at least something I’d fistfight a raccoon over at 2am.
We slap it all between two tortillas, griddle it until the cheese is molten lava, and serve it with a side of ranch because, let’s be honest, ranch is the duct tape of sauces.
Oh, and yes, I do end this recipe with a Napoleon Dynamite reference. Because if you’re not yelling “Tina, eat your quesadilla!” at yourself while making this, are you even doing it right?

Start by heating a pan or griddle on low with a little oil or a shot of cooking spray. Nothing wild—just enough to keep things from turning into a hot mess.
Now listen, we don’t do measuring in Quickie land. We measure with vibes, not spoons. So dice up all your ingredients into bite-sized glory.
Lay your tortilla down. Sprinkle half the cheese on one side. Then pile on your “fixins”—as much or as little as your emotionally unstable heart desires. Top it all with the rest of the cheese, fold that baby over (yes, like a quesadilla), and toss it on the pan.
Grill it until it’s golden and crispy and your kitchen smells like happiness. Let it chill for a few minutes before cutting—unless you’re into molten cheese burns.
Slice it up, dunk it in your favourite sauce (we ride for ranch), and question why you don’t do this every damn day.
