BBQ Chicken Quesadilla

1 Large Tortilla (flour or corn is fine) Left Over Chicken Cheddar Cheese (grated) Monterey Jack Cheese (grated) Diced Red Onion Pineapple Tid-Bits Jalapeños (optional) BBQ Sauce

Instructions

Start by heating a pan or griddle on low with a little oil or a shot of cooking spray. Nothing wild—just enough to keep things from turning into a hot mess.

Now listen, we don’t do measuring in Quickie land. We measure with vibes, not spoons. So dice up all your ingredients into bite-sized glory.

Lay your tortilla down. Sprinkle half the cheese on one side. Then pile on your “fixins”—as much or as little as your emotionally unstable heart desires. Top it all with the rest of the cheese, fold that baby over (yes, like a quesadilla), and toss it on the pan.

Grill it until it’s golden and crispy and your kitchen smells like happiness. Let it chill for a few minutes before cutting—unless you’re into molten cheese burns.

Slice it up, dunk it in your favourite sauce (we ride for ranch), and question why you don’t do this every damn day.
